Lemon Garlic Tilapia with Sundried Tomato Quinoa

We have been cooking a lot of fish lately. Here is a simple Tilapia recipe that I came up with the other night. Perfect for a light summer dinner.

Lemon Garlic Tilapia

Ingredients

  • 4 tilapia fillets
  • 1 lemon
  • 4 pats of truffle butter
  • 2 cloves of garlic, minced
  • 1 tbsp of cilantro
  • salt & pepper

Preparation

  1. Preheat your oven to 375. Spray your baking dish with cooking spray or olive oil.
  2. Place tilapia in baking dish, squeeze lemon juice over the fillets. Place a pat of truffle butter on each fillet. Sprinkle them with garlic, cilantro, salt and pepper.
  3. Bake in the oven until white and flakes with a fork. Approximately 30 minutes. Remove from oven and serve hot

Sundried Tomato Quinoa

Ingredients

  • olive oil
  • 1 cup chopped sundried tomatoes , not packed in oil
  • 2 onions, diced
  • 2 garlic cloves, minced
  • 2 cups vegetable stock
  • 1 cup quinoa
  • 1/2 tsp of cayenne pepper
  • 1/2 cup cilantro
  • salt & pepper

Preparation

  1. Rinse Quinoa for 1 minute and set aside.
  2. Heat oil in a saucepan, add tomatoes, onions, garlic and sautee for 5 minutes.
  3. Add stock and bring to a boil.
  4. Stir in quinoa and cayenne pepper. Return to a boil.
  5. Reduce heat and simmer for 30 minutes or until liquid is absorbed.
  6. Let stand for 5 minutes. Fluff with fork to separate grains. Stir in cilantro, salt and pepper.

  2. First of all this dish sounds delicious, but I do have a question. I dont have easy access to truffle butter so can i use regular butter? I never used quinoa is there another grain i can use if i dont have easy access to that too?
