Healthier Peanut Butter Oatmeal Cookies

Hey guys! I hope you all are having a great day so far. With all of the snowy days we have had this winter, I have had a lot of time to experiment with baking. If you are looking for a way to pass the time during a snow day baking cookies is a great way to spend the afternoon. I had some peanut butter and oats sitting around so I figured why not make them into some yummy healthy cookies. This is a pretty simple cookie recipe I added dried cranberries but you could do chocolate chips or raisins if you would like. Give this cookie recipe a try. They are healthy but the real test was that Jon actually ate them and liked them!


  • 1 cup of oats
  • 1 cup turbinado raw sugar
  • 1 cup smooth peanut butter
  • 3 tbsp unsalted butter
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup dried cranberries (optional)


  1. Preheat oven to 375
  2. Mix oats, sugar, cranberries together in a bowl.
  3. Combine peanut butter, butter in a bowl and whisk until mixed. Add eggs, vanilla and beat until smooth.
  4. Add the oat mixture to the wet mix and fold in with a rubber spatula. Slowly add in whole wheat flour until it is all combined.
  5. Drop 3 inch size balls of the mixture on to an ungreased cookie sheet and flatten with a fork.
  6. Bake the cookies for approx 14 minutes, until golden. Makes about 2 dozen cookies.
  7. Transfer to a wire rack to cool. Enjoy!

Food Pins of the Week: Cake Edition

Hey guys! I hope you are all having an amazing Saturday. We are having yet another storm here in NYC. I am starting to think that the now is never going to end. One of the things I love to do during snow storms is bake. I did some cookies this week and I am thinking maybe I should move on start thinking of other options. I have never attempted a cake but maybe it is time I tried. I have spent a lot of time looking at cakes on Pinterest and have pinned quite a few of them at this point. Valentine's Kiss Cookies

I baked these cookies tonight to give to Jon for Valentine’s Day tomorrow. Obviously you can have them anytime of year but to me the kisses make it kind of a cute Valentine’s treat. They turned out a little golden around the edges so next time I may shave a minute off of the bake time. If you are looking for a last-minute cookie idea for tomorrow or just love cookies like I do, you should bake these ones!


  • 1/2 cup of butter, softened
  • 1/3 cup of sugar
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 12 chocolate kisses
  • cocoa (optional)
  • confectioners sugar (optional)


  1. In a large bowl or food processor add butter sugar and vanilla. Beat by hand or in the processor till smooth.
  2. Gradually add flour while mixing it. Refrigerate the dough for an hour to firm it up a little.
  3. Pre-Heat oven to 375
  4. Roll into 1 inch balls. Flatten the ball and put a kiss in the middle. pinch the dough up around the kiss.
  5. Place 2 inches apart on an ungreased cookie sheet.
  6. Bake for 10-12 minutes until golden or to your liking. Let cool and transfer to wire racks.
  7. Sprinkle cocoa, confectioner’s sugar or sprinkles on top of the cookies. You can also keep them plain.
  8. Makes about 1 dozen.
  9. Enjoy!

White Chocolate Chip Chocolate Pudding Cookies

The holidays were very busy. We did some baking this year and here is a cookie recipe that got lost in the shuffle. I have already posted the Red Velvet White Chocolate Chips and Brown Sugar Cookies. This is a recipe Jon came up with when we came across some instant pudding packages in our cupboard. These cookies ended up being his favorite that we made over the holidays. I know Christmas is over but you can eat these anytime of year!


  • 2 1/4 cup flour
  • 1 tsp baking soda
  • 1 cup butter, softened
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 pkg chocolate instant pudding mix
  • 2 eggs
  • 1/2 pkg white chocolate chips


  1. Combine butter, the sugars, vanilla and the pudding mix in large bowl.
  2. Beat until it is smooth and creamy. Beat in the eggs.
  3. Gradually add flour and baking soda.
  4. Stir in white chocolate chips.
  5. Drop by rounded teaspoons about 2 inches apart onto ungreased baking sheets. Bake at 375 degrees for 8 to 10 minutes.
  6. Let cool and Enjoy!

Hold the Butter: Healthier Holiday Desserts- Guest Post

The holidays walk a very thin line of treating myself and over-indulging. I love the holidays; don’t get me wrong. I love the extra time with family, warm pajamas, big duvets and my holiday cider that makes my whole house smell like a big, delicious hug (recipe below). I love the the random gestures that overcome people during this time. People smile at each other at the grocery store. News stations cover wonderful gestures of kindness and graciousness. Dogs are adopted. Children are excited. And Christmas trees. Nothing smells better than a Christmas tree at night.

But, the holidays can get glutinous pretty quickly. Cookies, cake, delicious and beautiful treats are seemingly everywhere you go. I try to offset the indulgences that I do love with some healthier treats I can make myself and bring to holiday celebrations. Treating ourselves is a wonderful thing. Food is love and I am lucky to enjoy the best of both. But, overindulging doesn’t feel good. And what feels better than healthier cookies?! Here are a few recipes I use to save myself this time of year.

Christmas Cider

Ideal for: entertaining, warming your cold hands, happiness

  • ¾ cups apple brandy
  • 4 cups apple cider
  • 2 cinnamon sticks
  • juice and peel of 1 orange

Heat on low at least 15 minutes.

Adapted from my mom’s non-alcoholic version

I also love these Berry Cocoa Bars!

Ideal for: gifts, work parties, eating them yourself

  • ½ cup coconut oil
  • ½ cup unsweetened cocoa powder
  • 5 TBS agave
  • pinch of salt
  • tea almond extract
  • 1 cup rice crisp cereal
  • sliced berries of your choice

Melt coconut oil and mix with cocoa. Magic is happening.

Add almond extract, salt and agave and mix.

Incorporate liquid mixture into mixing bowl with rice crisp cereal.

Pour into prepared 9 x 5 baking dish.

Top with sliced berries.

Freeze 15 minutes and slice into bars.

Cashew Chocolate Cups

Ideal for: hosted holiday parties, showing off

  • 2 TBS natural cashew butter
  • 2 TBS coconut oil
  • 1 tea agave
  • dash cinnamon
  • 1 very ripened banana
  • 1 cup melted dark chocolate
  • Adapted from Oh, She Glows.

Melt the coconut oil in pan. Add agave, cinnamon and nut butter over low heat. Break up the nut butter, as best you can. Pour into and top with chocolate mixture.

Melt the chocolate by placing a large metal mixing bowl (I use a quiche plate. Whatever works.) over a big pot of boiling water. The chocolate melts more slowly this way and is much more manageable. (I also don’t have a microwave.)

Meanwhile, blend a banana for several minutes in the food processor. Combine with melted chocolate. This is the top layer that becomes pudding-like after it is refrigerated. And delicious : )

Cherry Oatmeal Cookies

  • ¾ cup agave
  • ¾ cup turbinado
  • 2 chia eggs (2 TBS chia seeds + 6 TBS warm water, mixed, and left for 5 minutes)
  • tea almond extract
  • 1 ¼ cups whole wheat flour
  • tea baking soda
  • tea cinnamon
  • ½ tea salt
  • 2 ¾ cups rolled oats
  • 1 cup dried cherries
  • handful of roasted pistachios
  • Mix dry ingredients. Mix wet ingredients. Mix together.
  • Bake at 375 degrees, 8-10 minutes.

Apple pie bites

  • Honeycrisp apples, halved, de-seeded and hollowed
  • Agave
  • Cinnamon
  • Sprinkling of salt
  • Dash of lemon juice

This recipe can be adapted to adjust to any number of portions and I love it because I am imprecise : ) Dash of this. Dash of that.

Basically, cut an apple in half. Remove the seeds and hollow, using the removed apple as the filling. Heat with the remaining ingredients and adjust sweet/tartness to your tastes.

Eat, drink and be merry! Make so much smart merry that you have no regrets this new year!

Brown Sugar Cookies

Here is another yummy Christmas cookie recipe. I am a huge fan of sugar cookies! I found a brown sugar cookie recipe and thought why not give it a try. The cinnamon really makes these cookies! Try these simple and easy Christmas cookies.

Brown Sugar Cookies


  • 1 1/2 sticks of butter at room temperature
  • 1/3 cup dark brown sugar
  • 1/4 cup plus 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups all purpose flour


  1. Heat oven to 350 degrees. With an electric mixer or food processor, beat the butter, brown sugar, and ¼ cup of the granulated sugar on medium-high speed until creamy, 2 to 3 minutes. Add the vanilla, salt, and ¼ teaspoon of the cinnamon and beat until combined. Reduce the mixer speed to low and gradually add the flour, mixing just until combined (do not overmix).
  2. On a small plate, stir together the remaining 2 tablespoons granulated sugar and ¼ teaspoon cinnamon.
  3. Shape the dough into balls (about 1 teaspoon each). A few at a time, roll the cookies in the cinnamon sugar to coat and place on baking sheets, spacing them 1 inch apart. Bake until puffed and golden, 10 to 12 minutes. (Cookies will deflate somewhat.) Cool slightly in the pans. Enjoy!

I have been meaning to learn how to bake for a while now and never actually get around to it. With it being the holidays I wanted to learn how to make some awesome Christmas Cookies. I wanted to start out with something easy and yummy. Jon gave me the perfect opportunity when he told me that they were going to have a baking contest at work and he needed 3 dozen cookies. We decided it would be lots of fun to bake together! I found a recipe for red velvet cookies and we decided to add white chocolate chips to them to make the cookie more holiday themed. They turned out delicious. If you feel like baking this week, I suggest giving this recipe a try!


  • 1 box Red Velvet Cake Mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/2 bag of white chocolate chips


  1. Pre-heat oven to 375 degrees.
  2. Combine cake mix, 2 eggs and vegetable oil using a hand blender or a wire whisk.
  3. Stir in white chocolate chips.
  4. Form tsp size balls and place on a lightly greases cookie sheet or baking pan about 1 inch apart. Slightly pat down each ball.
  5. Cook for 8-10 minutes. Let cool and Enjoy!
