Hey guys! I hope you all are having a great day so far. With all of the snowy days we have had this winter, I have had a lot of time to experiment with baking. If you are looking for a way to pass the time during a snow day baking cookies is a great way to spend the afternoon. I had some peanut butter and oats sitting around so I figured why not make them into some yummy healthy cookies. This is a pretty simple cookie recipe I added dried cranberries but you could do chocolate chips or raisins if you would like. Give this cookie recipe a try. They are healthy but the real test was that Jon actually ate them and liked them!
Ingredients
- 1 cup of oats
- 1 cup turbinado raw sugar
- 1 cup smooth peanut butter
- 3 tbsp unsalted butter
- 2 eggs
- 1 tbsp vanilla extract
- 1 cup whole wheat flour
- 1/2 cup dried cranberries (optional)
Preparation
- Preheat oven to 375
- Mix oats, sugar, cranberries together in a bowl.
- Combine peanut butter, butter in a bowl and whisk until mixed. Add eggs, vanilla and beat until smooth.
- Add the oat mixture to the wet mix and fold in with a rubber spatula. Slowly add in whole wheat flour until it is all combined.
- Drop 3 inch size balls of the mixture on to an ungreased cookie sheet and flatten with a fork.
- Bake the cookies for approx 14 minutes, until golden. Makes about 2 dozen cookies.
- Transfer to a wire rack to cool. Enjoy!
