Healthier Peanut Butter Oatmeal Cookies

Hey guys! I hope you all are having a great day so far. With all of the snowy days we have had this winter, I have had a lot of time to experiment with baking. If you are looking for a way to pass the time during a snow day baking cookies is a great way to spend the afternoon. I had some peanut butter and oats sitting around so I figured why not make them into some yummy healthy cookies. This is a pretty simple cookie recipe I added dried cranberries but you could do chocolate chips or raisins if you would like. Give this cookie recipe a try. They are healthy but the real test was that Jon actually ate them and liked them!

Ingredients

  • 1 cup of oats
  • 1 cup turbinado raw sugar
  • 1 cup smooth peanut butter
  • 3 tbsp unsalted butter
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup dried cranberries (optional)

Preparation

  1. Preheat oven to 375
  2. Mix oats, sugar, cranberries together in a bowl.
  3. Combine peanut butter, butter in a bowl and whisk until mixed. Add eggs, vanilla and beat until smooth.
  4. Add the oat mixture to the wet mix and fold in with a rubber spatula. Slowly add in whole wheat flour until it is all combined.
  5. Drop 3 inch size balls of the mixture on to an ungreased cookie sheet and flatten with a fork.
  6. Bake the cookies for approx 14 minutes, until golden. Makes about 2 dozen cookies.
  7. Transfer to a wire rack to cool. Enjoy!

Valentines’ Kiss Cookies

Valentine's Kiss Cookies

I baked these cookies tonight to give to Jon for Valentine’s Day tomorrow. Obviously you can have them anytime of year but to me the kisses make it kind of a cute Valentine’s treat. They turned out a little golden around the edges so next time I may shave a minute off of the bake time. If you are looking for a last-minute cookie idea for tomorrow or just love cookies like I do, you should bake these ones!

Ingredients

  • 1/2 cup of butter, softened
  • 1/3 cup of sugar
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 12 chocolate kisses
  • cocoa (optional)
  • confectioners sugar (optional)

Preparation

  1. In a large bowl or food processor add butter sugar and vanilla. Beat by hand or in the processor till smooth.
  2. Gradually add flour while mixing it. Refrigerate the dough for an hour to firm it up a little.
  3. Pre-Heat oven to 375
  4. Roll into 1 inch balls. Flatten the ball and put a kiss in the middle. pinch the dough up around the kiss.
  5. Place 2 inches apart on an ungreased cookie sheet.
  6. Bake for 10-12 minutes until golden or to your liking. Let cool and transfer to wire racks.
  7. Sprinkle cocoa, confectioner’s sugar or sprinkles on top of the cookies. You can also keep them plain.
  8. Makes about 1 dozen.
  9. Enjoy!

The holidays were very busy. We did some baking this year and here is a cookie recipe that got lost in the shuffle. I have already posted the Red Velvet White Chocolate Chips and Brown Sugar Cookies. This is a recipe Jon came up with when we came across some instant pudding packages in our cupboard. These cookies ended up being his favorite that we made over the holidays. I know Christmas is over but you can eat these anytime of year!

Ingredients

  • 2 1/4 cup flour
  • 1 tsp baking soda
  • 1 cup butter, softened
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 pkg chocolate instant pudding mix
  • 2 eggs
  • 1/2 pkg white chocolate chips

Preparation

  1. Combine butter, the sugars, vanilla and the pudding mix in large bowl.
  2. Beat until it is smooth and creamy. Beat in the eggs.
  3. Gradually add flour and baking soda.
  4. Stir in white chocolate chips.
  5. Drop by rounded teaspoons about 2 inches apart onto ungreased baking sheets. Bake at 375 degrees for 8 to 10 minutes.
  6. Let cool and Enjoy!

Brown Sugar Cookies

Here is another yummy Christmas cookie recipe. I am a huge fan of sugar cookies! I found a brown sugar cookie recipe and thought why not give it a try. The cinnamon really makes these cookies! Try these simple and easy Christmas cookies.

Brown Sugar Cookies

Ingredients

  • 1 1/2 sticks of butter at room temperature
  • 1/3 cup dark brown sugar
  • 1/4 cup plus 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups all purpose flour

Preparation

  1. Heat oven to 350 degrees. With an electric mixer or food processor, beat the butter, brown sugar, and ¼ cup of the granulated sugar on medium-high speed until creamy, 2 to 3 minutes. Add the vanilla, salt, and ¼ teaspoon of the cinnamon and beat until combined. Reduce the mixer speed to low and gradually add the flour, mixing just until combined (do not overmix).
  2. On a small plate, stir together the remaining 2 tablespoons granulated sugar and ¼ teaspoon cinnamon.
  3. Shape the dough into balls (about 1 teaspoon each). A few at a time, roll the cookies in the cinnamon sugar to coat and place on baking sheets, spacing them 1 inch apart. Bake until puffed and golden, 10 to 12 minutes. (Cookies will deflate somewhat.) Cool slightly in the pans. Enjoy!

I have been meaning to learn how to bake for a while now and never actually get around to it. With it being the holidays I wanted to learn how to make some awesome Christmas Cookies. I wanted to start out with something easy and yummy. Jon gave me the perfect opportunity when he told me that they were going to have a baking contest at work and he needed 3 dozen cookies. We decided it would be lots of fun to bake together! I found a recipe for red velvet cookies and we decided to add white chocolate chips to them to make the cookie more holiday themed. They turned out delicious. If you feel like baking this week, I suggest giving this recipe a try!

Ingredients

  • 1 box Red Velvet Cake Mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/2 bag of white chocolate chips

Preparation

  1. Pre-heat oven to 375 degrees.
  2. Combine cake mix, 2 eggs and vegetable oil using a hand blender or a wire whisk.
  3. Stir in white chocolate chips.
  4. Form tsp size balls and place on a lightly greases cookie sheet or baking pan about 1 inch apart. Slightly pat down each ball.
  5. Cook for 8-10 minutes. Let cool and Enjoy!

Product Review: Peanut Butter & Co. Peanut Butter Cookies

I noticed that my favorite peanut butter makers, Peanut Butter & Co have started making baking mixes. I have been going back and forth on whether I was going to give them a try. I bought the mix and tried them out this past week and I thought I would share my experience with you. The box contains 3 packets of peanut butter and baking mix, you need to add an egg and 6 tbsp of butter.

Peanut Butter & Co. CookiesI followed the instructions and mixed it as well as I could. I found that the mix was way to dry and could not make them into cookies. I decided to add some liquid to get it moist enough so that I could form cookies. I added 1/2 cup of milk to the mix. I wish I did not add so much because then it was a little to wet. I was still able to form good cookies out of the mixture.

Peanut Butter & Co CookiesThe box said that this package would make 36 cookies and it did of varying sizes. I was stretching it a bit at the end of the mix. I cooked them for about 15 minutes. The 10-13 minutes recommended on the box was just not enough time. The cookies turned out really yummy but I think I still prefer making them from scratch myself. I do know that Jon loves them, he has been eating multiple cookies a day!
