Spicy Kale Chips- Guest Post

Caitcait2 I am so glad Joanne was looking for some guest posts while she is busy with the new babe! AH!!! <3Since I am nowhere near a fashion guru, I will spare you and share a healthified chip! KALE chips actually. If you haven’t heard, kale is pretty amazing. like, it is the holy grail of greens.

Some interesting facts:

  • Per calorie, kale has more  iron than beef
  • More calcium then milk
  • 10%  more vitamin c then spinach
  • High in protein
  • Metabolism booster
  • Immune boosting
  • Detoxifying
    The list goes on! …Also, they make great snacks!

    { Spicy kale chips, or .. nacho style! 😉 }
    All of these ingredients remind me of Mexican, salty, savory & all around my fav!

    What you’ll need

  • 1 bunch kale {stems removed}
  • 2 tbsp olive oil { half for bowl, half for on the bottom}
  • 1 tsp red pepper flakes
  • 1 tsp cumin
  • dash of paprika
  • salt and pepper to taste

Directions:

  • Preheat oven to 300* F
  • Wash & cut your kale into small pieces { “chip size”}
  • Combine in a bowl: your olive oil, spices, + salt/ pepper.
  •  Toss your kale in the mixture by rotating them into the mix.
  • Place in oven rack <— cookie sheet with aluminum foil, bake until crispy.

No guilt here when snacking away on theses “chips” 🙂

Healthier Peanut Butter Oatmeal Cookies

Hey guys! I hope you all are having a great day so far. With all of the snowy days we have had this winter, I have had a lot of time to experiment with baking. If you are looking for a way to pass the time during a snow day baking cookies is a great way to spend the afternoon. I had some peanut butter and oats sitting around so I figured why not make them into some yummy healthy cookies. This is a pretty simple cookie recipe I added dried cranberries but you could do chocolate chips or raisins if you would like. Give this cookie recipe a try. They are healthy but the real test was that Jon actually ate them and liked them!

Ingredients

  • 1 cup of oats
  • 1 cup turbinado raw sugar
  • 1 cup smooth peanut butter
  • 3 tbsp unsalted butter
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup dried cranberries (optional)

Preparation

  1. Preheat oven to 375
  2. Mix oats, sugar, cranberries together in a bowl.
  3. Combine peanut butter, butter in a bowl and whisk until mixed. Add eggs, vanilla and beat until smooth.
  4. Add the oat mixture to the wet mix and fold in with a rubber spatula. Slowly add in whole wheat flour until it is all combined.
  5. Drop 3 inch size balls of the mixture on to an ungreased cookie sheet and flatten with a fork.
  6. Bake the cookies for approx 14 minutes, until golden. Makes about 2 dozen cookies.
  7. Transfer to a wire rack to cool. Enjoy!

Good Friday Afternoon! I hope everyone is having a great day. It is time for me to share with you my favorite food pins of the week, this week I will be focusing on pasta. I am in my third trimester of pregnancy and I have been obsessed with pasta for most of my pregnancy. Before I became pregnant we never really made pasta very often. These days we have it a few times a week, I have been on the search for some new recipes to try out since I feel we have over done a few of our favorites. Jon’s Famous Pulled Pork

Jon's Famous Pulled Pork

This is my husband Jon’s version of pulled pork. Most of you may be used to a sweet BBQ style pulled pork but this one is less sweet and really showcases the flavor of the pork itself. It is a pulled pork that you can serve anytime of the year and not just at your next super bowl party. The secret to all pulled pork is cooking it low and slow. This is a recipe that is better done on a Sunday, when you have the whole day to spend cooking up a great meal. If you love pork, you have to give this recipe a try!

Ingredients

  • Pork Butt ( 3 lbs )
  • Butter ( 1 stick )
  • Variety of fresh herbs ( Thyme, Sage, Rosemary )
  • 6 Cloves of Garlic
  • Salt
  • Pepper
  • White Wine ( Chardonnay )
  • Tin Foil

To make this dish is very simple.  It takes a long time but is a very set it and forget it type of roast.

  1. First you want to preheat your oven to 270 degrees.
  2. Next finely chop the herbs, about a handful of a mix of them.  Also finely chop the garlic.  Mix it with the butter to form a well mixed herb garlic butter.  Blend in a few pinched of salt and pepper.
  3. Now rub the pork butt all over with salt and pepper.  Coat the whole butt with the butter.
  4. Tear a long strip of tin foil and fold in half.  Place it in a baking pan and place the butt on top.  Wrap the butt up in the foil and pour into the pouch that has been formed about a half cup of wine.  Finish wrapping the butt up and place in the oven.
  5. Let the butt roast low and slow for about 8 hours.
  6. Once done, take out the butt, place on a cutting board, and pull the pork apart into shreds.
  7. Serve with roasted potatoes and vegetable and enjoy!

Food Pins of the Week: Cake Edition

Hey guys! I hope you are all having an amazing Saturday. We are having yet another storm here in NYC. I am starting to think that the now is never going to end. One of the things I love to do during snow storms is bake. I did some cookies this week and I am thinking maybe I should move on start thinking of other options. I have never attempted a cake but maybe it is time I tried. I have spent a lot of time looking at cakes on Pinterest and have pinned quite a few of them at this point. Valentines’ Kiss Cookies

I baked these cookies tonight to give to Jon for Valentine’s Day tomorrow. Obviously you can have them anytime of year but to me the kisses make it kind of a cute Valentine’s treat. They turned out a little golden around the edges so next time I may shave a minute off of the bake time. If you are looking for a last-minute cookie idea for tomorrow or just love cookies like I do, you should bake these ones!

Ingredients

  • 1/2 cup of butter, softened
  • 1/3 cup of sugar
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 12 chocolate kisses
  • cocoa (optional)
  • confectioners sugar (optional)

Preparation

  1. In a large bowl or food processor add butter sugar and vanilla. Beat by hand or in the processor till smooth.
  2. Gradually add flour while mixing it. Refrigerate the dough for an hour to firm it up a little.
  3. Pre-Heat oven to 375
  4. Roll into 1 inch balls. Flatten the ball and put a kiss in the middle. pinch the dough up around the kiss.
  5. Place 2 inches apart on an ungreased cookie sheet.
  6. Bake for 10-12 minutes until golden or to your liking. Let cool and transfer to wire racks.
  7. Sprinkle cocoa, confectioner’s sugar or sprinkles on top of the cookies. You can also keep them plain.
  8. Makes about 1 dozen.
  9. Enjoy!

Valentine’s Day Git Idea: 5 senses

A friend of mine gave me this idea a few years ago for Valentine’s Day. If you are stuck on ideas for Valentine’s day, why not do a themed gift using the 5 senses. Use:

  • Sight
  • Sound
  • Smell
  • Taste
  • Touch

Start off with your 5 senses to create a great Valentine’s Day gift pack for your date. Here are some ideas for those that you may be spending your Valentine’s Day with.

Guys for the Lady in your Life

  • Sight: a photo book. Make a book of all of the photos that you guys have taken together. The last time I made one we used mixbook.com and I loved it.
  • Sound: make a mixed tape, CD or load your favorite love songs on an Ipod. Music is a great way to bring you back to a special time in your life.
  • Smell: perfume. Find out what her favorite scent is and get her a bottle of perfume. My personal favorite right now is: Couture Couture by Juicy Couture

  • Taste: I do not know many girls that do not love chocolate. Buy her some yummy truffles or try your hand at baking. Make her something yummy! You can find some great V-Day recipes right here.
  • Touch: treat your lady to a mani-pedi or a couples massage. If you are really good you may try to learn the art of massage yourself and treat her to an at home massage.

Ladies for the Guy in your Life

  • Sight: framed photo or a photo book. Another idea would be to have photos done or a boudoir photo shoot.
  • Sound; a mixed tape, CD, Ipod. The same idea as above, give them the gift of music with the songs that represent your relationship.
  • Smell: his favorite cologne. My favorite to buy Jon is actually Zara cologne. It is a great price and smells fantastic.
  • Taste: bake him something delicious! All guys love home-baked goods. Last year I made Jon Chocolate Mousse made from of all things… tofu. It was delicious.
  • Touch: get him something in a luxurious fabric. A cashmere sweater or a pair of silk boxers/pajamas.

  • Sight: go to see a movie together. A night out with your single gal friends can make V-Day a lot more bearable. That is what I did when I was single. You can also grab a DVD of your favorite movie with you and your friends and watch it at home with some wine!
  • Sound: make plans to see a concert or put together a CD of songs that you guys love to sing a long to together.
  • Smell: ingredients for a spa night. If you decide to stay in and watch a movie what wouldn’t be better than doing some at home spa stuff for you and your gals!
  • Taste: bake or cook together. I love baking cookies with my girlfriends, it is a great way to spend an afternoon. Try baking these White Chocolate Chip Chocolate Pudding Cookies. They are easy and taste so good!

Good Afternoon Foodies! I have been so focused on New York Fashion week that Valentine’s Day had started to slip my mind. A great idea for Valentine’s Day is to cook a romantic dinner or to bake some sweets for your sweetie. I have been looking around on Pinterest with both ideas in mind. We will be headed out for Valentine’s this year but I am sure when the baby comes next year will be spent cooking dinner at home together. Jon is obsessed with salted caramel right now, the dark chocolate souffles with salted caramel sauce may be a good recipe for him! Crock Pot Spaghetti Sauce

Good Afternoon Readers! Over the last month I have been experimenting with my Crock Pot. I had some ground beef in the freezer and decided to make a hearty meat sauce for dinner. Some of my favorite sauces that I have had have been simmered and cooked for hours. What is better than using your Crock Pot to make this easy sauce and let it cook all day. I served the sauce with whole wheat spaghetti, I love whole wheat pasta but Jon is not a fan. You can use any pasta of your choice or even eat it on it’s own why not!?

Crock Pot Spaghetti Sauce

Ingredients

  • 1 pound of ground beef
  • 2 medium onions, chopped
  • 2 cans of diced tomatoes 14.5 oz
  • 1 can tomato sauce 8 oz
  • 1 can of tomato paste 6 oz
  • 1 bay leaf
  • 2 tbsp brown sugar
  • 5 garlic cloves, minced
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 1 tsp dried thyme
  • salt and pepper to taste
  • a pinch of red pepper flakes (optional)
  • parsley, chopped for garnsih

Preparation

  1. In a large pan cook beef, onion, and garlic until beef is browned. Drain grease from the beef using a slotted spoon.
  2. Transfer beef mixture to the bottom of the crock pot. Add the rest of the ingredients on top and stir.
  3. Cover and let simmer on low for 6-8 hours.
  4. Discard the bay leaf. Serve with your favorite cooked pasta. Garnish with chopped parsley. Enjoy!
